Ingredients

1 medium sweet potato, diced
6 ounces of diced chicken or turkey
bit of diced onions, optional
salt
pepper
1 tsp of coconut oil
a shake or two of cinnamon, optional

Instructions

Warm a non-stick skillet to medium heat with my coconut oil.
Dice up sweet potato into small cubes and toss them in.
Let them cook a bit and even put a lid on my pan so they soften up a bit.
Add some diced onion if you want to use that ingredient.
Make sure to keep stirring them around so they don't stick.
Throw in 6 or so ounces of chicken breast or lean turkey.
Add your salt and pepper.
Add cinnamon if desired. (it's good!)
Cook it a bit more until the chicken is warmed through. (use canned or rotisserie for a fast option)
If using fresh chicken, you may want to cook a chicken breast up before hand, dice and add to the pan after it's been cooked.
